No-bake Cheesecake with Optima molds: the solution against hot weather
Ferragosto is traditionally considered the hottest day of the year, so we came up with a way to cool down with these single-portion cheesecake that don’t require baking. Learn how to make them using our optima baking molds, perfect for both cooking and serving your creations.
Ingredients (for six 8 cm single-portion molds):
- 6.3 oz plain biscuits
- ½ cup unsalted butter
- 1 cup ricotta cheese
- 1 cup cream cheese
- ½ cup powdered sugar
- 1 tbsp vanilla extract
- Fresh fruit of your choice

Preparation:
- Use a food processor to finely crush the plain biscuits, meanwhile melt the butter. In a bowl, add the crushed biscuits with the melted (but not too hot) butter and mix well. Press the mixture firmly into the bottom of the 3-inch molds to form the base of your cheesecakes, using the back of a spoon to compact it. Place the molds in the refrigerator for about 30 minutes.
- In a separate bowl, sift the ricotta cheese, then add the cream cheese and the vanilla extract. Beat with an electric mixer until smooth and creamy.
- Remove the molds from the fridge and spoon the cheese mixture into each one, smoothing the tops with a spatula or spoon. Refrigerate the individual cheesecakes for at least 4 hours.
After 4 hours, remove the cheesecakes from the fridge and garnish them with fresh fruit of your choice, we used blueberries, strawberries, and raspberries. Now, your no-bake mini cheesecakes are ready to be served and enjoyed!
